In a microwave-safe bowl mix together:
— 1 cup water
— 2 tablespoons red wine vinegar
— 2 tablespoons onion powder
— 1/2 Jalapeno pepper, seeds removed and diced
— 1 teaspoon pepper
— 1/2 teaspoon red pepper flakes
— 1 tablespoon Worcestershire sauce
— 1 teaspoon Franks Red Hot Sauce
— 1 teaspoon Coleman’s Dry Mustard
— 2 teaspoons sugar
— 1/4 teaspoon garlic salt
— 1 garlic clove chopped
Mix all ingredients together well in a microwave safe bowl. Microwave on high for 90 seconds.
Place in refrigerator 10 minutes to cool.
Place pork or chicken in a zipper plastic bag and pour cooled marinade over the chops in the bag. Remove as much air as possible and seal.
Refrigerate for at least 2 hours (best if marinaded up to 8 hours)
Remove Pineapple Salsa from refrigerator before you start grilling (when it’s closer to room temperature it releases the best flavor)
Place chops on heated grill. Cook for approximately 15 minutes, turning them over a few times. Cook until internal temperature reaches 145 degrees. Remove from grill and let sit for 5 minutes. Top with 1-2 tablespoons of Wholly Guacamole Pineapple Salsa.
Serve with grilled veggies and rice!
