Barilla® Spaghetti with Chipotle Ground Beef and Cotija Recipe

When I was a kid, I never considered how hard things were for my mom. Being a single mother, she juggled her job and college classes, while still getting me to school on time, not to mention all my various activities. Now that I am an adult, I can more appreciate her sacrifices as I try to make my way in the world (with a lot more help than she had).

We recently gathered together to celebrate all the mothers in our family with a special dinner. And while my mother is no longer with us, I know she was there with us in the kitchen as the meal came together….

 

We were invited to be part of the Barilla® Pasta Celebrates Mothers program and chose a recipe with some spice (as that was a flavor profile my mother loved)

Barilla® Spaghetti with Chipotle Ground Beef and Cotija. I’ve always loved Cojita cheese and thought that this variation on the standard “italian” dish would be something my family would really enjoy.

The ingredients are readily available, you can find them at Walmart.

Ingredients:
1 Pkg, Barilla Spaghetti
1 Tbsp, Extra virgin olive oil
1 Lb. Ground Beef
½ Can, Chili Chipotle
1 Can (28oz) Crushed Tomatoes
Salt and pepper to taste
½ Cup, diced Poblano (optional)
½ Cup, cotija cheese

Directions:
Bring a large pot of water to a boil, meanwhile sauté beef in olive oil for 4-5 minutes or until browned and crumbled. Add the chipotle and poblano sauté for 1 minute, add the crushed tomatoes, 1 cup of water and season with salt and pepper; simmer for 3-4 minutes. Cook the pasta according to the package directions, drain and toss with the hot sauce, top with the cheese before serving.
