So here’s my favorite picnic coleslaw — since there’s no mayonnaise, no need to worry about spoiling. It goes great with barbeque. My husband uses it as a burger topping instead of lettuce.
1 package shredded cabbage
1/2 onion, finely chopped
1 1/4 cup white sugar
1 1/4 cup vinegar
1 1/2 teaspoon salt
2 teaspoons celery seed
1 teaspoon Coleman’s Mustard
1/2 cup olive oil
Mix cabbage, onion, and 1 cup sugar.
Combine the vinegar, salt, celery seed, dry mustard and oil in a sauce pan and bring to a boil.
Cool completely
Pour over cabbage and toss to coat.
Cover with plastic wrap and place in refrigerate overnight
